Yankee Banana Bread

It’s a cold and very windy day here in South Dakota, making it the perfect day for some baking! This recipe was created by my grandpa, who was “crunchy” before “crunchy” was cool! He spent hours in the kitchen creating healthy recipes that also tasted great! My sister and I always got to lick the bowl when he was done too! Bonus!

Yankee Banana Bread

“The sweetness of molasses,

The whole wheat flavor’s zest

Join dates and ripe bananas

To make this loaf the best.”

2 Cups Whole Wheat Flour

1 Cup Yellow Cornmeal (I’m sure he would recommend non GMO now)

2 tsp Best Baking Powder (recipe to follow)

1/2 tsp Baking Soda

1 Cup mashed ripe bananas

1 Cup Buttermilk

3/4 Cup Molasses (There are carrying degrees of molasses. Black strap is going to be the darkest)

3/4 Cup Dates, cut up

1. In mixing bowl stur together flour, cornmeal, baking powder, and soda.

2. Mix together molasses, banana, and buttermilk.

3. Blend wet ingredients into dry mixture. Add dates.

4. Turn batter into three 5/12 x 3 greased and floured loaf pans, or four rouind one poind tin cans.

5. Bake at 350 degrees for 30-40 minutes or until tests done with toothpick.

6. After ten minutes remove from pans or cans and cool n rack. Enjoy!

Best Baking Powder

“Leavening that you can make;

It’s best for everything you bake!”

Best baking powder is low in sodium and free of aluminum compunds. Here is the formula:

2 parts cream of tartar

2 parts arrowroot powder

1 part potassium bicarbonate

My Grandmother’s Favorite Banana Bread Recipe

When I was younger, I remember that I was always helping out in the kitchen either with my mom or my grandmother. I remember having a lot of “baking parties” when I would spend the night or weekend with my grandmother. Since she lived out in the boonies we needed something for her to entertain me with and that’s when I started to learn to bake.

I would always stand there on the stool beside her at the counter. I would watch her grab all the ingredients that she would need and she would let me add them in to the bowl one by one. I also remember sitting in front of the oven after everything was mixed and in there prepared pans for them to bake in the oven. I would sit there so intently watching and waiting, watching and waiting, so that I could be the first person to smell the wonderful aromas as they baked.  I also loved how she would always give me that very first piece of banana bread each time she made it. It would be so very warm and I would always slather it with butter ( I love the taste of butter and loved how it made the bread even more moist as it melted).  I want to share this recipe with you, so that you can in turn enjoy her favorite Banana Bread just like I did while growing up.

Grandma’s Favorite Banana Bread Recipe

  • 4 ripe bananas – mashed
  • 1 cup of raisins
  • 2 cups of sugar
  • 1 cup of butter or maragine (melted)
  • 2 beaten eggs
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups of flour
  • 1 tsp nutmeg
  • 1 tsp of vanilla

Preheat the oven to 350 degrees.

  1. In a bowl combine bananas and sugar and mash away
  2. Add in the eggs, melted butter, vanilla, nutmeg and raisins, then stir to combine.
  3. Next add in the salt , and baking soda, and then add the flour 1 cup at a time until throughly mixed.

  1. Line the Loaf Pan with Parchment Paper and pour mixture into the pan.
  2. Bake for 55 minutes to 1 hour; test with a toothpick inserted in the middle of the loaf when it comes out clean you can take it out and place it on a rack for 10 minutes before removing from the pan.

My family is literally one of the biggest gummy candy fans that I have ever encountered. When my husband and I were dating gummy bears were and still to this day are favorite candy. Then my sons Jayden (who is now 6 years old) and Gavin (who is 3 years old) came along. I thought Hank (my husband) was a gummy lover….you should meet these kids! Wow! If I would let them they would sit down and munch on gummies all day long. When presented with the opportunities to review Organic Fruit Snacks and Cookies from Tasty Brand I couldn’t think of a better family to test it on.

I got home from taking my son and his friend shopping (exhausting day) to find a huge box sitting on my door step. I was super excited as I knew it was my Tasty Brand box we’ve all been waiting for. We take the box inside and open the package. Tasty brand literally sent us their entire line of gummies and cookies to try! Wow! I was blown away! I was expecting a sample or two but their whole entire line?!? How awesome is that?!?!?

Jayden was literally squealing with excitement as he seen package after package of gummies being lifted from the box. I looked at the larger bags of gummies and squeezed them, I thought “Wow! Citrus Splash gummy is going to be hard, it feels really hard.” Jayden and Gavin are really into the chewy, soft kind of gummies so I was worried now. I opened the package and gave the first one a test myself. I couldn’t believe it! They were so soft after feeling pretty hard in the packaging. I gave them to my sons to try and they both gobbled them. I only allowed them a few each as we were going to be testing more.

Next we tried the other gummies, each one were so soft and very juicy! My husband even said, “Wow, the peach even tastes like peach and not the nasty artificial flavoring.” That is what impressed me, my husband was impressed. So I asked Jayden, “What do you think?” He just smiled at me and said and I quote, “These are the best gummies I’ve ever had.” Guess what he’s going to be packing in his lunch box for school tomorrow?

So we moved on to the cookies after spending so much time devouring the gummies. The cookies come 5 packs to a box, with only 100 calories and 3 grams of sugar to a pack! This made it a lot easier to give them to the kids, only 3 grams of sugar? Nice…but did they taste good? Well according to my sources which are a 3 year old, a 6 year old, 31 year old and an empty box I would say yes absolutely!

Both women love to cook but didn’t have time to sift through cookbooks and magazines for evening meals and what’s worse, found themselves at the grocery store several times per week.

Using the Site

Relish’s philosophy is “A weekly menu planner aimed to help busy families put wonderful meals on the table every night. No sloppy casseroles or expensive kitchen blunders. Instead look for everyday food…with a gourmet twist.”  I can whole-heartedly agree that the service lives up to their philosophy.

The web-based interface is very easy to use, and it’s handy that you can access it from any computer.  Each week, new menu items are featured (usually around 10 different entrees) for you to build your weekly menu from. You can choose from a new list of delicious recipes. Choose kid-friendly, quick, simple-gourmet and vegetarian options. Edit the side selection, build your grocery list (add and delete from the list.) 

Overall I was able to make my menu, print out a weekly list on what I needed to buy; it served our family well and will continue to do so. You will notice substantial savings by sticking to a list! A Relish! Subscription is only $7 per month!

EZ Squeezees Review

EZ squeezees are my new favorite product…seriously.  I pack lunch for my two kiddos every day and the ONLY things that they don’t complain about are their applesauce pouches and yogurt tubes.  I complain about it though:  They are costly.  They are not re-useable.  Who knows what is growing inside those bags/tubes?!? (gross!)  So far though I have chosen to concede the argument in exchange for my kiddos eating yogurt and applesauce daily without complaint…but I’ve known it could be done better.

EZ squeezees knew it could be done better…AND THEY DID IT!  CELEBRATION music please!  EZ squeezees was developed in Baltimore (MD) by parents who concluded that “manufacturers of processed foods were capitalizing on (parents’) desires for convenient and nutritious foods.”  But now parents have an option that is cost-effective and eco-friendly.

EZ Squeezees:  Reusable food pouches for all ages. They are cost effective and eco friendly! They are BPA and Phthlate free!  The are dishwasher and freezer safe!  Plus you can write on the back of them so you don’t have to guess…or taste test…to figure out which one is applesauce and which one is the smoothie!  Best part yet?  They are super easy to use…just FILL*SQUEEZE*EAT*REPEAT!

Ok so my conclusion is that I can’t live without them.  But when I first received them in the mail I admit I was skeptical – mostly about cleaning them.  So I’ve put them to the test.  I’ve used them for several weeks filling them with applesauce, yogurt, yogurt with sprinkles, even a smoothie.  I even forgot to empty one for two days (in my defense my daughter left her lunchbox stuffed under the seat in the car.)  They have large side openings which make them easy to fill…and easy to clean.  I was able to easily rinse and scrub the inside of the pouch with a cloth before placing in the dishwasher.  

If you are looking for a way to feed your child(ren) healthy and convenient foods or even a way to carry a healthy snack for yourself, I highly recommend EZ squeezees.  They even haverecipes listed on their website for fruits, veggies, smoothies, paleo, Whole30 and more!  By using EZ squeezees you can save money, save the environment, and feel good about “convenience” eating.

The Baker mills company began in 1994 but the original company and recipes go back several years before that. The recipes belonged to Wallace Christofferson and were passed down to his daughter who made them for her family and eventually began Kodiak Cakes. They started with Hot Cakes and waffles and later added both cookies and brownies. They have a well produced Web Site http://www.kodiakcakes.com and a Facebook page. This company has been featured on Martha Stewart shows and has been endorsed by Weight Watchers, Healthy Cooking and Diabetic Living magazines. The website includes recipes as well easily followed cooking tips.

Kodiak Cakes Pancakes WAHMReview

When the Kodiak Cakes was approached for a review, they gladly sent two boxes of Pancake Mix with coupons for more. The pancakes are easy to make adding only water. So, if an ice storm should come quickly and there are no eggs in the house then you can still have healthy pancakes without a worry.

The website also includes businesses that carry Kodiak Cakes products. The most likely in our area is Target.
We have enjoyed the pancakes and plan to share the boxes and coupons with friends. They are lite and absorb the butter nicely. Very delicious indeed.
